How do I get my iPhone to stop remembering old addresses? Example when I start typing in the TO box it will show addresses that are no longer on my phone.

Clear out the old entries in the Previous Recipients (Mail > Window > Previous Recipients) in your Mac's Mail.app. Sync when you're done.
