My iPhone 14 Pro, has started restarting most nights. It happens at around 2-3am, and I only realize it happened when I wake up and the phone asks me to type in my password because Face ID only works then.

I upgraded to iOS 17 a few weeks ago, and there has been at least one further upgrade since then, and this is happening both before the latest upgrade as well as after.

All apps are updated...

Is this a "me" issue, or does anyone else using iOS17 have this going on?

Funny you say this. I expected it yesterday morning because I had set an update to complete overnight. I have however on two occasions been promoted for the pin straight away after waking up and I think you might be on to something here.
 
I installed Status Lite, and it tells you the boot time and uptime. Today the iPhone restarted at 2:15am...

Its actually been happening since iOS 16. Check your logs to see if there is a "System Memory Reset". More likely than not it occurred at 2:15am. I've been speaking to T2 support for months and the cause has yes to be determined.
