Hi all, i'm now backing up my 64G iPhone in order to get a replacement, however for a couple of days i will be using a 16G iPhone 5S.
What will happen if i try to restore the backup? I just want the settings, email accounts, etc to be restored, is there such an option in order to avoid restoring apps and games?

Same here, I would like just things like settings, accounts, wallet, and any of the watch info--dont' want data, songs, apps, etc. Is there ANY way to backup EVERYTHING (to preclude loss if the iPhone craps), but then do a SELECTIVE restore? Where does Apple accept requests?

I don't think so.. Maybe with 3rd party apps.
 
Do a backup of your iPhone. Then delete all of the apps and do another backup.

When you use the temporary phone restore from the backup that doesn't have the apps. Then when you get your new iPhone restore from the one that does include the apps.

Your messages will end up a bit out of sync as you'll likely lose the ones from when you're using the temporary phone. But it's about the only workaround I know of.
