So if apple stopped signing older versions of firmwares, what happens for older generation devices i.e iPad 1 if you need to restore?

The latest version of iOS that a certain device can run is always signed for that device. So, the latest version of iOS an iPad 1 can run, 5.1.1, is still signed only for iPad 1s.
