Iphone unlocked and jailbroken apps

Hi Im pretty new to the iphone and I bought a 2g that was already jailbroken and unlocked. I started hearing about iPhone bricking I am not sure what that is. It sounds like if you download new updates that it locks your unlocked phone. I was wondering if I download apps from the app store on my iphone will I run into any problems such as bricking?

What firmware does it have? if it's 2.0 or 2.1 there should be no problem using the app store..don't be afraid

it has 2.1. So what are some things I should not do in order to keep it un bricked?
