That would makes sense that Apple would supply more iPhones to Apple stores vs a carrier.

I usually go through AT&T but in this case, it's going to be whichever way I can get a preorder through on.

I wonder how much ATT makes off of iPhones ordered through them?
I do Apple because I don't want to give ATT any more money than needed.

AT&T makes very little off of the phones they sell. Probably less than $50 at most. They make their money from the phone contracts.
