It won't feature 120fps Pro Motion because there aren't any 120fps capable OLED screens

Doubtful for OLED on the iPad. There is nothing indicating Apple has the necessary suppliers lighted up to manufacture the necessary panels for the 10.5/12.9. LCD seems to be the primary for the time being until Micro LED arrives.

We are a long way off from having OLED iPad screens but bet they would be nice. Maybe next year but most likely later than that. What happened to Micro-LED?

These characteristics make OLED somewhat unsuitable for iPad Pro. And already mentioned is the OLED supply issue.
As for iPhone and ProMotion, it's largely an input-lag reduction feature for use with Pencil. It's probably not a priority for iPhone.

I think it will switch to 120Hz on particular moments for example when you're scrolling something but not when you don't do anything (or even watch a video). But I just assume that.
