First off, I cannot believe how much faster my new XS Max is. Of course, I’m coming from a iPhone 6 Plus.

Here is my question what are the two little on off switches underneath the battery icon? I googled it and couldn’t And couldn’t find an answer.

OK, I have two questions I lied. How do I post a Screenshot of what I tried to describe above. Is it because I’m a newbie and don’t have permission to post photos?

And i don’t have anything underneath the battery as you described.
 
Is the phone supposed to do landscape mode when on the home screen like the + phones do? Mine won’t. Hmmm.

Currently, nope. IMO, I'd always keep my plus's orientation locked because it bugged me when it'd move to landscape, was never really a huge fan of that feature.

It's just letting you know you can access control center from there. Swipe down from there once and you won't see it again.
