2016 SE is a possibility and has 3.5mm jack. But is thicker. That said, it has better battery life than the IPT which I found unusable.

My SE still runs fine on IOS15.

They can be picked up really cheap too (though not from apple).

This. I'm still using my SE1 nightly as a media player to fall asleep to. I use my wife's old SE1 as a dedicated point-n-shoot camera... I use a special case for it that has a camera-like grip for it.

I don't think the 2016 SE is a good 'replacement' for the final model iPod touch since they both drop off at iOS 15, honestly.

For size I'd look at an iPhone 12 Mini as the used cost comes down, that or something like the iPhone XR/11 for cost *today*.
 
I went from iPod touch 6th gen to adding a iphone 4, then the Touch 7th gen, then ditched both for the iPhone 5s, and I've never looked back. I really like the flat sides, so the next upgrade was an iPhone SE 1st gen and depending on your use that's better and more useful than the iPod. When the iPhone 12 mini came out with flat sides and tiny, that was my next upgrade but then you'll want wireless headphones.
 
What is you main phone? It may be worth it to exchange both your iPod and iPhone in favor of a newer iPhone.
 
SE1 as primary phone (2 of them) on IOS 15 and running great. Never felt the need to upgrade to the latest overpriced iPhone every year. For portable music and radio (FM), it's iPod Nano 7th gen for its small form factor.
