So, I've had the new generation iPod touch 3 months now and on several occasions it's said that it needs to be restored as a new iPod. I've tried everything; restoring it, backing it up, restarting the laptop, uninstalling/re-installing iTunes, trying to plug it into a new USB port, etc.

What do I do? Someone mentioned change the drive letter but what's the process and DOES IT ACTUALLY fix the problem? Or do I just suck it up and talk to someone from Apple?

The exact error message you are getting would help. Have you tried connecting it to another computer? Is your iPod jailbroken? Changing the drive letter is for iPods that have a disk mode, like the iPod classic and some earlier hard drive-based iPod nanos. It is definitely not normal to have to restore an iPod several times in 3 months...
