I have searched, and i know it it here, but i can not find how to send pdf and documents to your ipod touch and be able to read and edit them. thanks for any help you can give me.

also i was reading somewhere that someone set up there ipod touch to act like an iphone. Is this possible?

Send one as an attachment to your email account and you can open a read it on the Touch. As far as I know there is no such thing as a PDF editor for the Touch/iPhone.
 
I use an app called air sharing which allows files to be transferred to the iPod touch via wi-fi. The files can be read when wi-fi is off. I use it to store bus schedules on my iPod Touch. You can't edit pdf on a Touch.
