Tried using my old output cable for my new iPod Touch (the one with red, yellow and white and you hook up to the audio jack) but now it doesn't work. It used to work for my 5th gen, all I had to do was scramble the connectors around. Also tried using the iPod Touch with a little portable LCD player but video still doesn't want to output, though audio works. There is no setting to enable video out in the iPod too, so what gives?

There's no more video output through the 3.5mm jack anymore. You'll have to buy a cord through apple, they have a composite (red, yellow white) and component (RGB).
