I've never had anything that is 1000 nits but my current MBP is not bright enough outside.

Do you think 1000 nits is enough for outside viewing or do we need 3000 nits like some outside tv's?
 
Not good enough for bright noon sun on a hot summer beach. How many people use their computers in the noon hot sun on a beach?
 
The iPhone 13 Pro Max has a 1000 nits display and I used it under strong sun. I could still read the display clearly, although of course it's not so comfortable.

Have an HP 840 G5 with a 1000nit sure view screen (700 nits actual) and it's perfectly suited for full sun use. But the macbooks are glossy which automatically make it seem more "dim" outside. I'd say 1000 would be more than enough
 
I have measured my 2019 16” as having 470 nits max. It is marginally usable in bright sunlight so 1000 nits should probably be OK, but note that your perception of luminosity is not linear but logarithmic. For instance 50% brightness on my MBP is about 100 nits (not half of max).
