I've always had a 16GB, 3GS, 4 and now 5.

I keep between 4 and 5GB of music on the phone, and with assorted programs still have around 5GB free.

I do have a 32GB iPad for movies, documents, PDFs etc though, if I didn't also have the iPad I suppose I might have gone for 32GB.
 
I had a 8gb white iPhone 4 with 1000pictures , 25 apps and 52 songs of music and had 300MB available on it which I upgraded. And 16gb would be fine. I now have a 32gb iPhone 5 but that was my choice.
 
I'm coming from an iPhone 4 16GB going to an iPhone 5 16GB...

my phone content is normally filled with games/misc apps and photos. I stream my music and video content, however, working out, I'd rather carry around my handy 16GB iPod nano 5G, then strap my iPhone to my arm.

The key thing with me is, when it gets to the point of me running out of space, and usually its the games that take up the most space..but by that time I'm usually bored of certain apps, therefore its a simple cleaning house process...taking off old/completed/boring/forgotten games/apps and replacing with newer and better apps.

This process is made easier as I now own an iPad 3 32GB that bares the brunt of all my app needs.

I think if you are someone with a lot of media content who needs it on the go, and only has one media device...whether that be ipod, iphone or ipad...then I would get nothing less than 32GB.
 
Still got 7GB of free space on my 16GB iPhone 5.

I am using iTunes Match, and it's a great service on iOS 6.

I have 81 apps & 330 photos. One of the app is a huge 1.5GB game, so 16GB is still plenty of space even today.
 
You'd be fine. I have 15gb of music on my phone alone so got the 32gb..iTunes match may be a good idea I'm just worried it would use all my data?
 
16 GB while not optimal is an adequate amount of iPhone space - especially if you do not keep music on the iPhone but stream it (via iTunes Match) and keep the rest of your data on the iCloud.
 
I find as the world transitions to cloud based options, 16 GB is plenty for me.

Then again, I have one of them fancy unlimited data plans which will become worth their weight in gold throughout the coming years.
 
It find it insane that anyone really uses space any more other than if they are going on a trip or something. With apps like spotify for music and AirPlay apps to stream from home and cloud apps to round it out I rarely ever put anything on my phone

16 gIgs is more than enough.
