Mine only goes up to 1800rpm+ on heavy load such as, lots of tabs open in chrome/safari and more than 8 apps at the same time. It's very quiet under normal load.
 
The 2015 i7 iMac makes more heat at max CPU and is thus unlikely to be quieter. Idle is slightly cooler. (I've owned both 2015 and 2017 i7 models and I've not noticed the 2017 being louder.)

IMHO the i7 from 2015 is not as bad as the i7 from 2017. on the 2017 model the fan would spin up constantly whereas on on the 2015 it was only every now and then. in the end I bought an i5 (2017) because I like my machines being quiet. I ran handbrake for an hour on the 2017 i5 and the fan stayed at 1200RPM. and to be honest, I couldn't tell the difference between the 2017 i5 and the 2015 i7. of course you can measure it with geekbench. the new i5 is only around 10% slower (single thread performance).
 
OP:

A compromise might be the "midrange" 2017 iMac with the i5 7600 CPU.
They are said to be considerably quieter than the i7...
 
How loud are these computers? Like a generator? :p I just ordered an i7 iMac. I'm using a 2012 MBP and while the fan does run, I never notice it. I guess my new iMac will be a lot louder?
Almost silent 95% of the time. If you have a Fusion Drive model, or an external hard drive sitting on your desk, you will hear that before the fan. This whole fan noise thing is much ado about nothing.

That's what I'm thinking. I don't work in a silent environment. I've almost always got music playing so I'm sure it'll be quiet for me. As long as it doesn't sound like a chainsaw. :p
 
I ordered a refurbished Core i5 iMac and they shipped me a i7. I waited to see if it was loud and it's been whisper quiet. I heard the fan come on for about a minute during heavy load (transcoding media) and it was barely audible.
