I have an iPhone 11 Pro 256GB. I have over 170 games and use 54GB. I hate Offload Apps, so I don't use it. I also hate managing my storage. So 64GB isn't enough for me.
Answer on the poll and reply your storage usage.

I have an iPhone 11 Pro 256GB. I have over 120 games, keep original photos and videos, and use ~109GB. Even if
I turn off Keep Original photos and videos, I will still use ~50GB. I hate Offload Apps, so I don't use it. I also hate managing my storage. So 64GB isn't enough for me.

So you answered your own question so what is the point ? 64GB is fine for me. I have around 25Gb left. All my stuff is loaded onto my iPad Pro 11 with 512Gb

Actually, I could survive on 32 GB if I wanted to. I don’t use a lot of media, and I don’t have that many applications, but 64 GB has been More than enough for my applications.

I’m an iCloud user. 64GB is plenty for me.
If you have an extreme amount of apps, games, or downloaded media, then, even with iCloud, 64GB won't be enough for you. How much apps, games, and downloaded media do you have?

(I actually changed the date in the past to 1/1/2038 to get a super long stopwatch time, don't worry about Photos and TikTok saying "Last Used: 1/1/38")

I'm currently only using 48GB, and I think given the popularity of streaming service and cloud storage the average person probably doesn't need more than 64GB, but I still wish they'd increase the minimum. It would cost them a matter of cents.

You are using relatively close to 64GB. Keep a few gigs available at all times to install updates, download an app or movie, take a photo or a video, or even to keep your iPhone running smoothly (without lags)

Apple doesn't sell 32GB iPhone's. To find a 32GB iPhone, you have to find an iPhone 7 or 7 Plus or an even older iPhone. You shouldn't buy an iPhone 7 or 7 Plus. Especially don't buy an older iPhone. They are too old to buy at this point.
Primary issue with those is battery on used models. Even A9 handles iOS 13 just fine albeit with 2GB RAM, will be more prone to reloads.

Wouldn't buy it at MSRP on contract/installment or even at Apple's refurb/clearance pricing. At $200 or so for brand new prepaid kits, it's fine (assuming you do want the prepaid service and storage is sufficient).

On my 64gb phone I'm currently only using 29gb of it and that is with years of photos/videos and a bunch of music.

Get the amount that suits your needs. I only need 64GB because I have most things stored in the cloud and the apps I have don’t take up that much space.

Here
64GB isn't enough for me because I like to carry around my entire music library. 256GB is a bit much for me even with Photos set to download originals and synching all my music. I don't download any games or THAT many apps.

I could get by on 128GB, but they don't offer a Pro in that.

LOL, I'm sure Relentless is more than aware of this.

It depends on the individual. For me, 128 GB would be recklessly carefree, 64 GB is still half-free. Music is streamed, and I recently cleaned out my Photos library, which was around 2.5 GB on the iPhone anyway, as it was 'optimised'. If music was not streamed, I would have used about 5-10 GB more. Still would fall short of reaching the tipping point. I have 60 apps on the phone, system apps included. I usually use my device without bothering much. I do not shoot videos with this device, or let's say shoot long videos, so storage is not an issue for me. However, today, 128 GB ought too be the minimum storage offered.

Below is my usage. 9.5 GB approx is being used by videos I have downloaded on the device. These are too many to watch simultaneously, about 15 titles. So, I could end up with lesser if I just had 2-3 titles on it at any time. 64 GB is enough for me today.

I mean clearly I don’t have “extreme” amount of anything. I stream all my music and use some apps that I need on a regular basis. Optimise storage option also helps save memory by offloading apps that you don’t use regularly. Plus I don’t really have the time in the day to play games on my phone. So far it’s working out well for me.

It's an iPhone X I bought at launch. Storage use isn't growing much further than this. It's fine. 16 gigs free is more than enough.

It depends on how you use your phone, so there is no right or wrong overall answer. My phone has a capacity of 64GB, with 51.94GB available. I wanted a 32GB phone but it wasn't available at the time of purchase.

11 apps? Mind if I ask you to share your home screen(s)?

Just today I was seeing if I could reduce my app count, but as it is, all the apps that I have are the ones I use frequently. Although, I could possibly give myself a digital detox and start performing a lot of those tasks (especially banking and social media) on the desktop and that will shave off about 15 apps. Hmm. Breaching another subject here.. ;)
