You are right, your EFI32 will never be upgraded according to Apple. This will not stop you to run 64-bit apps as I said. You will also be able to run Microsoft 64-bit kernel operating systems. There may be some booting problems with install DVDs on those but work arounds are also known.

You will not be able to run the 64-bit kernel of Snow Leopard and its successors. This basically limits the kernel RAM to 4 GB. So future multiple grahics cards with 2 GB RAM and more could become a limitation. I do not think that it has a serious impact for the near future.

To get an EFI64 machine you will need to look at a 2008 quad or octad. That is likely to cost you three or four times as much as the 2006 version.
