Hello again !

I'm about to purchase my new mbp, and I was wondering if you think 256gb is acceptable. I don't mind carrying an external hard drive (I'll have to do it regardless of the seize of the internal ssd), but since I'm not familiar with macOs, I don't know how much space the system and the native apps take.

I only plan to install cubase and maybe one or two small programs, any document / movie or else would be on my external hd.

I had a 256GB SSD in my MBP. It was fine for a lot of applications, and my 90GB Photo Library. My iTunes library grew too big, and it is now on a network drive. I think you should be fine, and you shouldn't necessary require that external HD for a while. Mac OS X itself doesn't take much space (<10GB).

I also have several photo libraries as I've found that I'm active with the photos I have durning the year in which I took them and then archive them off so they are easily accessible but not resident on my drive. Ultimately they end up in the cloud in addition as I feel safer having a few back up sites. I already use rsync from Terminal to back up to two separate drives in separate locations. (In case of disaster or theft)

But, I've found I don't need to have all my data on my working drive.
 
My rule of thumb when buying a new computer: check how much disk space I'm using on the old one and double it. But I like to keep everything on there, no cloud and no external drives (I do make backups of course).

So if 256 GB is twice the capacity you're using up now, you should be all right.
 
256 GB should be fine. I had a 500 GB HDD on my old 2011 MBP and at the most I would STILL have 200 GB of free space as I would transfer videos, photos, music, etc to my externals throughout the years.
