Verizon says they can't port my Apple Watch phone number, which is synced to my iPhone X AT&T number. Verizon had no problem with syncing my iPhone main number.

Both Verizon and At&T say the watch operates with EITHER GSM or CDMA, but not both.
 
You shouldn't need to port your Apple Watch number. That number is just assigned to the sim, but you can't reach the watch by calling that number. You need to remove the existing plan from your apple watch and reactivate with Verizon.
 
@bradbomb, is correct. Verizon will assign you a new phone number for your watch on Verizon. This new watch phone number will be used with NumberShare to pair to your Verizon iPhone X phone line.

Note: the cellular watch does not support CDMA. Only LTE and UMTS (select carriers).

I totally agree! Apple understands, but reality is lost on Verizon and AT&T. So apple support says same as you: cancel AW part of AT&T, port iPhone X over from AT&T to Verizon (in my case), then set up AW with Verizon.

Before you can port the AW S3 LTE to accompany your iPhone on new cellular provider, you will have to go to  Watch app, tap Cellular, Tap Remove whichever plan you have syncing the phone to main account of your current cell provider, and your AW is free to fly. In my case, Verizon already has the IMEI of the iPhone X with order to port, and the IMEI of the AW, and new SIM on the way.

You will then have no AW LTE connectivity, but you can use AW with the paired iPhone until new Company's SIM arrives. Then you can pop in the new SIM and, in my case at least, notify the new company rep on her cell phone to call you back on company phone/computer to bring the watch on board through NumberShare plan.

Thanks all! Was great to be banging fingers on keyboard rather than head on table while talking to cell provider reps.

Just one additional comment for all: removing the carrier plan from the iPhone Watch app does not end the service commitment, you will still need to contact your carrier to cancel the watch's phone line.

You are right, Dave, despite Apple's perspective. I do need to call AT&T & cancel the NumberSync $10 wearable plan. Note: I had to Remove the Plan from the Apple Watch app for the new cellular company to even acknowledge it's availability, only cancelling at the current company will end it.
