Depends on the apps you use. You can stay in an older iOS if none of your apps require a newer one.

Why do I like to not upgrade my devices to the latest iOs? You can't go back can you? =[

It could also be depended where you live,
Here in Holland, the banks have altered the rules concerning digital theft, if you bank account gets hacked and emptied, and you did not run the latest update, you run the risk of not getting a reimbursement of your lost cash.

while I have not heard of a case involving this scenario, it might be prudent to read the rules if you use internet banking 🙂
