if i was to do a restore, i want to be able to also restore all the apps and files that i currently have on it, excluding mp3s and videos of course. is there someway to possibly do that?
 
if the iPod Touch shows in windows exporer it would be easy as saying restore your pod re-install everything without mp3#s and zip the drive but since the touch doesn't unfortunately you will just have to do it all manually when u next restore or update

EDIT: other method would be to ftp into the touch and copy the applications folder to your hard drive and if you have mail and maps then I'd suggest just adding repo.us.to to sources and install prep files and copy everythin back
