I see here that it's possible to rename and edit the icon for a Focus Mode on Mac OS Monterey (pics attached).

But I'm not running Monterey and see no such options on my iPhone running 15.0.

Anyone else have any luck?

Yes you can.

You can create many and rename them, change all things within them.

You can edit custom ones. You can’t edit the pre-made Apple ones, though you can hide the pre-made apple ones and make your own (I made my own “Personal”) because i didn’t like the name or icon.

Yea, I probably should have made that clear, but it's the same as macOS Monterey, which is what the OP was using as example, so assumed they would be aware.
