Is it possible to merge gmail with your .me icloud mail?

Or does Apple just expect me to go through all my accounts on all websites and change it over to my "me.com" email address?

There have been a number of people experiencing issues with iCloud mail so, as some have said in other threads, I wouldn't recommend using your me.com email exclusively.

If you do want to use your me.com email exclusively, you can always set your Gmail to forward to your .me email address.
