OK I got it. I had to drag the ToolbarItems.nib from the Safari package onto the desktop in order to open it remove the toolbar then drag it back into the package.

This is awesome. I feel all geeky.

How much better is this.

Isn't it possible and easier to remove the Google bar by unchecking 'Google Search' from Safari > View?

I think that is how it was in Safari 1.x but the option is not there in safari 2.x

Sorry 😛 I thought I have updated my Safari to 2.x a few weeks ago thru software update but hey, I'm still using 1.3.1
 
I think Safari 2 is only available with Tiger. But you can download Pacifist and you might be able to remove safari 2 from a copy of tiger, but I'm not sure if that is legal or not.
