I just setup a new 8TB external drive to be used as a Time Machine backup. When setting it up through Time Machine I turned on encryption. After the backup was complete, around 17 hours or so, the encryption progress bar did not seem to be moving much and it had a long way to go...I just ejected the drive and remounted it and it prompted me for a password.

Did it actually encrypt it? Is there a way to determine if the drive is encrypted?

When you type this command into a Terminal window, then it will give you a list of your CoreStorage volumes and their encryption status.
