Is restoring to a previous version possible?

I would like to finally give iOS 6 a try on my 4S.

If I backup my current iOS install (version 5.1.1) and end up not liking the update, is it possible to restore my phone to its exact state (pics, apps, iOS version, etc.) before I upgraded to iOS 6?

No, on a 4S there is no way to do that. If you upgrade, that is it, you will be on 6.1.3 and can't go back.
