Imagine me sitting aprox 2-3' from my iMac watching HD movies. Would you go for 27" or 21" in terms of interpolation/upscaling to 1440p? Is upscaled 1080p still nice from my distance in 2560*1440?

Have you ever seen an iMac 27"? Imagine watching videos on that. You can check it out at any apple retail store before you make your decision. The truth is that you will have to be at a decent distance from the screen, given its size. Also keep in mind the screen is glossy, which may be a deal breaker for you.
 
this may be my main reason for buying the 27'' imac.

i already have late 2008 MBP 15''.

Apple doesn't support Blu Ray, and 27" is even too big for Blu Ray. So it makes you wonder, why get a 27" display for watching movies?

For watching movies, the 21" iMac should give a better picture quality with a Blu Ray rip ( assuming the panels are of the same quality )
 
Get a boxee box, get a nice 32 inch tv, wall mount it and call it a day. I just saved you $1000 dollars, you are welcome.
 
I just got my 27" iMac in it's gorgeous for movies, especially if you have them in High Definition.
If you have standard (DVD) resolution, then of course you're going to see pixels in fullscreen mode... The DVD-resolution is about a fifth of the iMacs native screen resolution...
