Is there a technical reason for this, or does the OS just not offer it?

Currently? No Mac supports the so called "HiDPI".

It's assumed that Apple's next gen Mac displays will have this option, as it is evident in the Lion OS within hidden files.

What happens is, the workspace stays the same (ie, as if it's at 1680x1050 on a 15" MBP) and the resolution is increased to increase the quality of the image displayed, just like the new iPad.

This is very uncommon in the current industry, so once Apple starts doing this, I assume other companies will start doing it as well.
 
Well the current rumor is that the new MBP will have a retina display by default. So you're dreaming for an option that's higher res than that? Or just for a retina display at all? Or are you just bored? :D
