Is there a difference in the front and back cameras of an iphone 7+? Also, it appears there are different settings on the camera that I haven't quite been able to figure out. I want the best lens for videoing someone sitting about 8 feet away. Can someone give me some idea of the best setting for this situation, and how to make those changes?

Yes as with any phone. The rear cameras are almost always going to be 100% better

Ok, the "100% better" is inaccurate but it's true enough.

As wonderful as the camera is, I found the 7 Plus too big and traded it in on the Xs three years later with its better camera and more comfortable size.

Of course it doesn’t if one would put much value on the capabilities of their selfie camera.
For those interested in photography rather then their own image, those folks would want a capable camera at the rear, opposite of the screen which is used for framing.

It is very logical given the space constraint for optics in the front face
