You mean like Railroad Tycoon 3? That's the only one I can think of.

A Mac version of Trainz was announced by N3V in February of 2011. It's not been released yet, but is expected sometime this year.

Also look at OpenTTD (OpenTTD.org). The base game is simple and fun and the game mods available let you change the game complexity and visual look in significant ways to match the exact sort of play style you are looking for.
