Is there a way to airplay in the background?

I want to be able to launch a video app (like twitch) and just airplay to my TV and leave the app in the background.

The apps seems to play just fine in the background until I launch any app (some app works like Safari, but some other app doesnt work mostly games). Is there a way to fix this?

Airplay video uses your phone's graphics processor to handle the encoding IIRC. Plus it uses memory and other system resources. In other words it does this for performance reasons.
