I tried googling but I kept getting conflicting information.

Basically I'd like to be able to control the volume up/down like I do on MacOS via the function keys. Is there a keyboard shortcut for this or do I have to use on screen sliders/the up down buttons on the device itself?

There aren’t any function type shortcuts I know of that is universal throughout iOS. Some apps (Amazon Video for example) will use the up and down arrow keys to adjust volume.

I’ve found the easiest way is to use the trackpad to shove the curser to the top right corner. If you push the curser up enough it activates control center. From there, two finger scrolling over the volume slider adjusts the volume easily. You can be pretty quick with it after using it a few times.

I actually did not know two-finger scrolling would adjust the volume. Pretty slick.

If i use youtube with safari the up/down-buttons doesnt work, but on-screen i see volume get up an down (but without function)

I find YouTube has a lot of work to do to take advantage of the Magic Keyboard. Scrubbing through the video with the trackpad for instance...
 
Yes, the YT-App is very crappy, but YT with Safari works fine with trackpad and keyboard (but not volume)
Its a shame for the YT-App... :(

btw:
And its a shame for Apple don’t allow 4K on YT (max. 1080p)

I'm glad that I am not the only one who has been doing that.
 
Hi there! You can control the volume by holding the command key and using the up and down arrows, However this only works in the application playing the audio. I was looking for a way to do it too and just stumbled across it, Hope this kinda helps :)

When I'm watching a show in the Apple TV app I found that the up/down arrow keys can control volume, and the right/left keys will skip ahead/back.

I dont use this app for a long time, because with the Magic Keyboard Youtube with Safari works better than the YT-App
Without Magic Keyboard the YT-App ist better...

You can create your own keyboard shortcuts:
 
You can use the shortcuts app and bind that shortcut to a combo of keys (e.g. cmd + for volume up).
