If anyone can help me with this, I'd really appreciate it. I thought I remembered the associate at the apple store showing me how to fast forward and rewind within a single track, but I can't seem to remember how to do it, and I can't find any instructions online.

I synced a playlist with the watch so I can play songs with the watch itself being the "source". How do I fast forward without having to use the iphone?

Alternatively, can anyone recommend a good pair of bluetooth headphones that go with the watch and will allow me to fast forward? I just bought the Bluebuds X, but they will only skip to the next track. I want to be able to leave the phone at home when I go running, but I won't be able to enjoy the music function if I can't skip to my favorite parts in a song/rewind whenever I want to. :(
 
You cannot fast forward or rewind within a track using the native music app on the watch. The apple associate was misinformed. Although maybe there might be a 3rd party music/radio watch app that allows this. You might want to explore the available watch apps. Maybe Apple will include the controls you want in a future iteration. I cannot recommend a particular brand of headset, but I do know some of them have the move within a track feature. Maybe a visit to Best Buy to check them all out en masse.

Curious to know, were you able to play your songs through the speaker on the Apple watch? If so, are you using the watchOS2 beta?

Thanks Honey Badger! I never tried playing the songs through the watch speaker - I just paired it with the bluetooth headphones.

Yes, you can't play them through the speaker although the WatchOS2 will allow it. I misunderstood the OP and thought maybe he found a way around it without the beta, but that was not the case.
 
I don't have an apple watch, so this is just a guess:

Could the employee have played the songs from the iPhone and used the apple watch to control the music? Then it should be possible to ff with the usual combination of click and hold a button, in this case the crown of the watch.

This might be it, but it doesn't seem to work for me. Even when I'm playing songs with the iphone as the source, when I press and hold the crown Siri comes up. Does anyone know anything about this?

Just tried it - I'm only getting Siri. I seem to vaguely remember that it had something to do with the crown, though. Does anyone know if you can pull out the crown and then rotate it to make it ff? I seem to remember something like that, but I'm afraid I'll break the crown by pulling on it.

You can rotate the crown to turn the volume up and down, that is it. The crown will not pull out. Pushing the crown brings up Siri and I even tried asking Siri to fast forward in the song by 10 seconds or 30 seconds and it just advances to the next song...so no dice, sorry.

I can't seem to find a way to FF on the Apple watch itself, but my bluetooth headset allows me to FF using it's controls. (I have a Phaiser Tecton BHS-730) However, I can't figure out how to select where in the recording I want to listen (e.g. I have lots of podcasts converted to music so I can play from my apple watch, but I can't jump forward 15 or 30 min in a recording without FF listening to everything in between(
