Well it is a personal device. It's not like it's a shared computer where lots of different people frequent it. You can passcode lock your iPhone.

Unfortunately, Apple doesn't allow apps that control other apps.

If you don't want to jailbreak there is no way to password protect individual apps.

You can hide icons without jailbreaking but still access them through Spotlight. Not perfect but if you just want to prevent people from casually scrolling through your email, contacts, whatever it might be a deterrent.
