Is there an option to change icons to dark mode, like you can on iOS/iPadOS?

Not yet. It used to be features like this started on MacOS and made their way to iOS, but after the iPhone became the cash cow it goes the other way. Probably next year.
That said I believe there are tutorials out there and maybe even some third party apps for creating color themed icons.
