I know you can't with AT&T Fiber not totally at least. Don't think Verizon FIOS either but I could be wrong. Google Fiber I believe you can though.

Most companies, including Verizon, have a modem that the inbound connection has to go into but after that you just route a cable for the internet connection to your router. Pretty common practice and I've yet to hear or have a company that lets you run a cable from the street to your router without at least a PoE switch or something they own so they can remote manage, traffic monitor, or troubleshoot any issues.
 
Can you even buy a stand alone fiber modem and have it work with any provider?
 
I have FIOS and I use a Unfi Dream Machine Pro, which is connected directly to the ONT, the optical network terminal. This is a box that is outside where the fiber comes from and an ethernet cable is hooked up to, which comes into the home. The company usually provides this and one doesn’t need to pay for it.

I also have a Verizon router, but I am not paying anything for it despite not using it.
 
Just use their router and use your own stuff for switching and Wi-Fi. Ours has a box in the garage with an Ethernet output. It feeds a switch which feeds the hotspots.
