Sorry, if this is has been asked before, but I can’t find anything about it.

I have a 6,1 and want to install Linux on it instead of MacOS. I might try Windows as well if Linux doesn’t turn out well.

Are there any does or don’ts I have to be aware of when installing either OS?

I know a Windows install can bugger up the bootrom on a 5,1, hence my question.

Windows Secure Boot BootROM signing only affects Macs made before 2012 - except obviously the Mac Pro mid-2012, which essentially is a Mac Pro mid-2010 with faster Xeons, 12-digits serial number instead of 11-digits also some corrections related to calibration of sensors and output ports (very late made mid-2010s already have these last two improvements from factory).

AFAIK, there is nothing like Windows Secure Boot on the Linux side.
