I need to swap an iphone out and I don't have an hour to wait for it to erase via the built in erase all content and settings option. Is there a quick erase method?

you can restore relatively quick it if you have a computer handy
but with no computer, none that i know of besides the built in one

Go to the settings and set up a password.
Enable the "Erase Data" function on it.
Lock the phone and then enter a wrong passcode 10 times.
I don't know that it erases it all, but if it doesn't then it does lock it so that it has to be restored before it can be used again. So you'll be safe, either way.
