The tab to change color profiles is removed from the display preferences tab.

I just got a new Mac, and am not a fan at all of this default profile, as it is making my monitor push very red.

Just saw this post. Do you mean the built-in profile maker that you "eyeball" rather than using a hardware calibrator? They moved it and I had to do some digging but I found it — more hide-and-seek from Apple.
1. System Preferences > Displays
2. Click Display Settings… button at bottom.
3. Choose your display in the list at left.
4. Click the Color Profile: popup and find the last item, Customize…
5. Click the + button. This brings up the trusty old Display Calibrator Assistant. As with previous versions, hold down the Option key when you click + to enable Expert Mode.
