New keyboard doesn't have a power or eject key. Is there a way to put it to sleep from the keyboard? I've done some searching and haven't found anything that applies to the new machines.

That's interesting. If you press the Touch ID key it locks back to the login screen but no sleep. I never really put my computer to sleep but I can see how this would be needed if you didn't want the light
 
There's no "F1" key?
I touch that and... ZZZZZZZZZZZZZZZZZZ.
(I wouldn't know, haven't used an Apple keyboard in 25 years)

There is an F1 key, and it most certainly does not sleep the computer. :)

I've looked at a ton of pages talking about keyboard shortcuts and it just does not seem like it's there, nor is there any obvious way to create a custom shortcut in the keyboard preferences pane ("Sleep Computer" does not seem to be an available action).

The way to do this on an Intel Mac with Big Sur is simply:

System Preferences > Keyboard > Shortcuts > App Shortcuts and press +, then in the dialogue box:

Application: All Applications
Menu Title: Sleep
Keyboard Shortcut: (your shortcut.)

(NB: the command is 'Sleep', not 'Sleep Computer', at least on Intel Macs.)

Tested on my M1 MBA, and yes, that works perfectly.
 
If you press the TouchID button, it will lock and then sleep shortly after that. That's what I've been doing so far

Ah, good point, I forgot that it goes to sleep pretty quickly (about 5 seconds) from the login screen. I'll take it until something better comes along.

Thank you! My iMac is in my bedroom and I sleep it late at night and am tired of navigating to the menu.

(It's sad that I don't think about using shortcuts more.)

If you click the Touch ID button it displays the Lock Screen, and then it sleeps after about 5 seconds.
