I heard they are soldered onto it but is there anyway?

Do you have tiny fingers, piano wire (to remove the glass...), a good lighted magnifier, a reflow soldering station, and the willingness to void your warranty?

None of the current iMacs has soldered ssd or hdd even iMac Pro. You can check on ifixit to see how it is done. It’s kinda hard though. If you don’t break anything it doesn’t void your warranty. However, if you need to carry your iMac to Apple Store, it’s better to put the original drive back.
For me, having it replaced by a reseller is the best choice. Apple Store doesn’t offer such thing but there are resellers out there doing it.

The HDs/SSDs in 2017 iMacs are replaceable, if you are willing and can unglue & re-glue the LED display, which are the trickiest steps of the process. I recommend OWC videos over iFixit. they do a thorough job of going through the process. Make sure you have the proper opening tool and adhesive replacement strips from Amazon.
