I'm trying to get an external hard drive setup for my i5 MacBook pro. I need to get something with Firewire 800 so it's fast enough for HD video editing.

I found a RAID enclosure that's exactly what I need (cheap, too).
However, I'm only going to be using one hard drive right now. Can I use just one hard drive in a RAID enclosure? Eventually I'll want to buy another drive for a RAID 1 setup, but I'd like to know if I can get by with one for now. The hard drive I want to buy is a Seagate 1.5TB Barracuda.

Thanks in advance.

EDIT: The RAID enclosure supports JBOD, so I would think that one drive would be OK, but I'm not sure.
