If there's one thing I've learned working with people who do things on their Macs that I don't is that: until I did, I couldn't imagine why anyone would need XYZ more.
People who claim that 16GB of RAM is plenty enough for anyone's needs because they're able to edit video on their MBAir are comical. Ask any professional video editor and they'll laugh you out of the room.
Ask any professional designer if 16GB of RAM is enough to run Adobe InDesign, Illustrator, Photoshop, and Acrobat at the same time while working in 1GB layered PSD files and moving them around in an ID layout and they'll likely politely excuse themselves to run off to a very important tire rotation meeting.
I have 128GB of RAM and I can't imagine needing more for what I do (graphic design primarily for print work), but there's a 3D artist out there that would likely quit their job if they were stuck using a computer with that amount of RAM. Prior to getting the latest Studio with 128GB RAM, I couldn't imagine needing more than 64 GB RAM... but the difference is quite noticeable to me and I'm able to bill a few more hours per month because of it.
And when you're dealing with real professionals who charge hundreds per hour to do things, a computer or amount of RAM that can save you just an hour per day pays HUGE dividends in total. Suddenly the cost of the initial purchase becomes an afterthought.
