Because that really isn’t a good VPN and I don’t trust it. At least using NordVPN I’m fully encrypted with my data.

Make sense. Since you're using a VPN, it's bypassing the iCloud Private Relay which is why you aren't seeing any slowness related to that. If you turn off the VPN, you'll likely notice some slowness going through the Private Relay instead.
