I have and have always had iTunes set to NOT automatically update on my workstation laptop...

I wake up to this popup window on the screen this morning, the second time in last week or so...

Because I've never seen these popup overnight until just recently and I have and have had the auto-update box unchecked, I'm concerned this may be some type of malware?

Does this look legit to you?

There is a Windows stand alone app to check for and update Apple software that is separate from options within apps.
Thanks, I'm unaware of that.

Do you know the name of it or how I can disable it?

I have not encountered this over 10+ years across 3 different computers.
