I have a 3GS. My dad plans to buy the new iPhone when it comes out since he is eligible for upgrade on AT&T and I'm not. He doesn't especially want all the new features, so he will take my 3GS and give me the new iPhone. All we have to do to keep our numbers is exchange the sim card, yes?

Secondly, if I backup my 3GS iPhone with iTunes, then we switch phones, and I restore from backup on the new iPhone, will the new iPhone have everything from my 3GS including apps, contacts, and all of my text messages?

Sorry for the newbish question, I've just never done anything like this, and I don't know if text messages are saved by the iTunes backups.
 
Yes, everything is saved in the backup thru iTunes including text messages.
You will be able to restore to your backup no matter what kind of iPhone your using.
