I can tell you're one of the more experienced IT guys. It's easy to get stuck in the familiar. I wish I could share a talk that Eric Schmidt just gave at my workplace as he hits on this subject specifically. However, with the increase in network speeds and the versatility of iSCSI, in about five years any talk about FC is going to be reduced to, "What kind of card is this?" "Oh that's an old fiber channel card. Just toss it." And the people who would have disagreed will be retiring anyway. :)

Yup, that's what 99% of our storage is too and we have almost 100PB currently. However, its not affordable to most businesses. Just a damn SFP can cost them $900 alone.
 
Now that ESXi 6.0 works on 2012+ mac mini's, I would probably recommend installing ESXi - then connect your Synology or other storage via iSCSI. Then provide that storage to OS X in a virtual machine. It's completely free. The other advantage is, if your OS X install ever fails, you can spin up a new VM and move that disk over while restoring the original virtual machine.

Actually you may both be right. FCOE could be the way forward - benefits from the stronger fiber channel protocol and cheaper ethernet transport.
