I just upgraded iTunes (I use Snow Leopard), and it doesn't seem to affect my iPhone 4 (4.2.1, greenpois0n)

MuscleNerd has stated that 10.2 is safe for jbers. Sync, dfu, afc2, and shift/option restore still work.

Has there ever been a version of iTunes that adversely affected jailbroken phones?

Yea, once a Windoze version removed a .dll file which Blacksn0w needed but that was easily fixed.
As far as I can recall, that's it.
