go to the iTunes menu, and you can see it says cmd H = hide

Command-H works dandy for me too.

Plus my assigned hot keys with Synergy.

You haven't overridden Apple+H using the custom keyboard shortcut maker tool in System Preferences, have you? That would cause hiding to not work.
