New to iOS (got a 7 Plus in July).
Just got a X.
If I backup my 7 Plus using Itunes on my PC and then set my new X up as a new for testing for a while, can I then restore the 7 Plus backup using iTunes to my X and the X would be setup exactly as my 7 Plus at the time of the backup (iMessages, photos, apps, etc.) ?
 
I’ve never even backed up the 7+ using iTunes before. I assume just download iTunes to the PC and plug the 7+ using the lighting port to usb cable
 
Basically, yes.

I strongly recommend encrypting the backup, which will store app data, passwords and other data other than just the apps. Don't forget the password.

Consider also going to Preferences>Devices and right-mousing the backup and selecting "archive" to prevent overwriting the backup.
